There are two species of Agaricus which do not stain yellow on bruising. One is the common field mushroom (agaricus campestris).

The other (pictured) is the Tree Mushroom which I have found excellent to eat. This mushroom grows in association with eucalypts. It probably forms an ectomycorrhizal relationship with Eucalyptus and trades nutrients, such as phosphate, with sugars.
